We ate our way through Beijing's pizza restaurants to find the city's top slices.

The price 128RMB for 12".


The deets Salmon? On a pizza? One of Opera Bombana offspring Pizza View’s deeper cuts, this one swims against the current by adding a splash of surf to the cheesy turf, dashing it with sliced asparagus and flecks of mascarpone. It might not end up as your go- to slice, but the crispy-crusted white pie is an eclectic bemuse-bouche that brings something intriguing and different to the table. The red-pie purist should seek the salami-laden Diavola (80RMB).

The deets 'Back in Italy, we eat these as snacks with our hands,' Bottega pizzaiolo-in- chief Paolo Salvo tells us, though you’d need mighty hands – and an even mightier appetite – to take this one on solo. We’re not sure if a calzone just fell into the fryer one day by accident, but the results are certain; there’s a sweetness to the first few, doughy bites, but once you reach the salami, mozzarella and ricotta-filled centre, you’ve hit the jackpot.

The price From 45RMB for a 6" x 6" to 142RMB for a 12" x 17". 


The deets In elite pizza circles, the crust-leaving community are (quite rightly) the subject of much ire, though we have Pie Squared and their Detroit-style deep dishes to thank for bringing peaceful and tasty compromise. Instead of a traditional crust, crisp edges form from melted cheese – some might say burnt, we say delicious – making corner slabs like this one probably the most sought after. Creamy alfredo sauce, grilled peppers and chicken create a killer slice, which can be maxed out to great girth for an excellent party piece.

Great Leap Brewing #45's The Green Machine

The price 110RMB for 16"; 25RMB for an 8" slice.


The deets This Philadelphia-inspired mammoth boasts a beefed-up, pillowy crust, but that’s about as beefy as it gets; loaded with whole roasted garlic cloves, red peppers, courgette and kale, it’s a veritable forest out there, while black pepper ricotta adds creamy bursts amid the herbivorous action. This isn’t just some token nod to the veggies, though, it’s stand-up scoff in its own right, and one of the highlights on GLB’s exceedingly good pizza menu.

Pizza Saporita's Forest

The price 22RMB for a slice; 88MB for a 13” round pizza. 


The deets One of the richest pies in town, Saporita's favourite son is topped with thinly sliced mushrooms, toasted walnuts and fennel-spiked sausage, before being drizzled with black truffle cream. For the indecisive or indulging diner, the fact that all the the pizzas here are available al taglio – as the Romans do, in hearty rectangular portions – is one of Saporita's joys, but we see no reason to just to delve into a whole one of these.

Gung Ho!'s Spicy Beef

The price 99RMB for 11"; 143RMB for 14". 


The deets The intrusions of Chinese ingredients onto the pizza top have been largely sacrilegious (see: Pizza Hut’s Peking duck and hoisin and durian offerings), though Gung Ho!’s addition of Xinjiang spices may have finally cracked the fusion code. Crunchy red onion, green peppers and spicy tender beef complete the combo, which is, like all of its pizzas, sizeable and customisable every which way – thick or thin, on whole wheat, white or even gluten-free crust.

The price 88RMB for 13"; 198RMB for 20".


The deets Toppings: some say chuck 'em all on, others like it as stripped as possible, but the rich flavours of the capricciosa can turn even the staunchest of pizza minimalists. Neapolitan stalwart La Pizza's been keeping its class amid Sanlitun's Bar Street for nearly a decade now, and this classic of the canon weds black olives and artichoke hearts with mushroom and baked ham on a delightfully delicate base and doughy crust.

Green Cow City Café's Organic Porchetta

The price 150RMB for a 14” whole pizza. 


The deets This ultra crisp crust made from organic flours finds its soulmate in lavish slabs of porchetta, from Green Cow’s Shunyi farm-raised pigs. Combine the two and we’re in chart-topping territory. Lash that all together with the world’s greatest dairy product – cheese, of course – and you’re faced with this: a New York-style pizza par excellence. Sustainability never tasted so good.

The deets A refreshing pizza. They said it couldn’t be done, but if anyone was gonna do it, it had to be Bottega, who are just going from strength to strength as the finest pizzeria in town. The signature pie, dashed with salty anchovies and juicy cherry tomatoes is a corker from the get- go, but it’s when the crowning burrata bursts and oozes its beautiful, creamy innards onto the wonder below that this one really takes flight. It might just be our favourite.

The deets Some like it hot, and this colourful character from Pizza Marzano certainly packs a brawny punch, loaded with spicy ’Nduja sausage, Calabrian-style salami, chilis galore and, just for good measure, more grilled peppers. Blobs of mozzarella, parmesan and rocket provide some respite, but unleash a ball of creamy burrata Italia (98RMB) on top to truly balance out the kick. An ultra-thin base adds a pleasing crisp to counter the greasy, and no less pleasing, meaty action on top.

The deets For all the wealth of toppings that can grace the upper crust, sometimes you’re just chasing a no-nonsense quick fix, and that’s exactly what you’ll get with this New York-style mozzarella fest. Thicker crusts are ample love handles for an ever-so-cheesy and very sleazy pizza affair. Life hack: add extra cheese to take this baby to the next level. Want even more? Tube Station also claims to make ‘the biggest pizza in Beijing’ – the 32-inch Party Monster.

Ramo's Parma Ham and Rocket Salad

The price 68RMB for 12"; 22RMB for two slices.


The deets Chaoyang has long been the seat of pizza power in Beijing, but Ramo keeps on fighting the good fight down in Dongcheng’s ever more depleted hutongs. Don’t be fooled – although it might call itself a salad, this is definitely a pizza, but a liberal topping of fresh rocket and cherry tomatoes certainly lessens the guilt; salty, fatty but darn tasty parma ham swings it back the other way, coming together nicely on a crusty and more than adequately cheesed thin base. Luckily for the carb-conscious, all of Ramo’s pizzas are available by the slice.
